Jacket Potato

Jacket Potato

Method

Method

This potato in this recipe can either be done in the oven or the microwave. Of course the microwave, if you have one is cheaper and quicker.

Also you can make your own pesto if you have blender. It simply is fresh basil and pine nuts whizzed into a paste.

However, jacket or baked potatoes can pretty much have any filling from plain butter/marg to yesterdays leftovers. Be creative with what you add. Makes for a wholesome delicious meal that can easily ring the changes.

The recipe included here is a chicken and pesto recipe.

  1. Pierce potatoes all over with a fork. Place on the microwave turntable, towards the edge, and cook on HIGH, according to the manufacturer’s instructions, turning the potatoes over halfway through cooking time.
  2. While the potatoes are cooking, heat oil in a pan, add the chicken and garlic and cook for 5-6 minutes all over until brown. Add the pesto and stir through, followed by the tomatoes and spinach.
  3. Remove the potatoes from microwave carefully and leave to stand for 1 minute. Cut potatoes in half and pile the chicken mixture on top. Serve with extra salad leaves.
